Green Beans, Ham, and Potatoes

 

A perfect, warming dish for the transition from Fall to Winter! 

 

Smoked pork 

2 onions, sliced thick 

2 lbs. fresh green beans 

2 teaspoons salt 

3 garlic cloves, minced 

½ teaspoon cayenne pepper 

1 lb. ham  

2 lbs. potatoes, peeled and quartered or use small new potatoes  

 

Place smoked pork and sliced onions in a Dutch oven. Cover with water.  

Bring to a rapid boil. Reduce heat, cover, and simmer for an hour.  

Increase heat and add beans, garlic, salt, and cayenne pepper.  

Let your mixture come back to a boil, then turn burner down to medium-low.  

Let ingredients soft boil for approximately 15 minutes. Add the ham and soft boil for an additional 30 minutes.  

Add potatoes and boil 30 minutes more.
