Red Sunflower Farm Gluten Free Waffles
These waffles are a classic at the farm! Top your waffles with anything you’d like, but fresh fruit mixed with a drizzle of maple syrup is one of my personal favorites.
Note: The batter should be runny, but if it’s too runny, add a bit more cassava flour.
1 cup sorghum flour
¼ cup almond flour
¼ cup + 2 tablespoons cassava flour
2 tablespoons chia seeds
2 tablespoons psyllium husk (not psyllium powder)
½ teaspoon salt
3 teaspoons baking powder
¼ teaspoon cardamom
3 tablespoons butter, melted
2 ¼ cups milk (sour if you have it)
4 eggs, well beaten
3 tablespoons maple syrup
4 ounces mashed pumpkin (optional)
1. Whisk dry ingredients together.
2. Stir in wet ingredients.
3. Cook on a waffle iron at high heat. Most waffle irons will require approximately 1 ¼ cups of batter per waffle.
4. Serve with maple syrup and/or fruit topping.
