The perfect Christmas morning breakfast, paired with a delicious cup of coffee!
Ingredients:
1 cup corn meal
1 cup brown rice flour
1/2 teaspoon baking soda
2 tablespoons flaxseed, ground
2 cups yogurt
2 eggs, slightly beaten
1 teaspoon vanilla extract
2 tablespoons butter, melted
1 1/2 cups blueberries
1 cup nuts, chopped
Directions:
Put all dry ingredients in a mixing bowl, whisk to mix
Add yogurt, eggs, vanilla, butter and mix well
Add blueberries and chopped nuts to mixture
Cook on high heat in non-stick pan
Pour a small amount of batter (about 1/4 cup) into pan
When bubbles appear and break on surface, turn over and cook the other side
Serve with warm butter, maple syrup or raw honey
Optional: Cook some fruit in a little maple syrup as a topping for the pancakes
