Pulled Pork BBQ & Homemade Coleslaw

If you live or have lived in Kentucky, you know this upcoming weekend is a big deal…the running of the 151st Kentucky Derby! Looking for something to make for the festivities? Try out Mackey’s pulled pork BBQ & homemade coleslaw. Sure to be a crowd pleaser!

Pulled Pork BBQ

  • Pork shoulder roast - bone in

  • 1 cup vinegar

  • Salt & pepper

    • Place roast in a crock pot. Add in vinegar. Salt lightly

    • Add generous amounts of pepper (the entire surface should be covered in black pepper)

    • Cook in crock pot for 10-12 hours on low heat

    • Meat should fall from the bone, or shred with forks

    • Eat as is or top with your favorite BBQ sauce

Coleslaw

  • 12 ounces cabbage, chopped

  • 1 cup cilantro, chopped

  • 1/2 cup plain yogurt

  • 3-4 green onions, finely chopped

  • 1 clove garlic, minced

  • 1/2 jalapeno, seeded and finely chopped

  • 3 tablespoons olive oil

  • 3 tablespoons lime juice

  • 2 tablespoons parsley, finely chopped

  • 1/2 teaspoon salt

    • Mix and refrigerate for a few hours

    • Serve cold
