If you live or have lived in Kentucky, you know this upcoming weekend is a big deal…the running of the 151st Kentucky Derby! Looking for something to make for the festivities? Try out Mackey’s pulled pork BBQ & homemade coleslaw. Sure to be a crowd pleaser!
Pulled Pork BBQ
Pork shoulder roast - bone in
1 cup vinegar
Salt & pepper
Place roast in a crock pot. Add in vinegar. Salt lightly
Add generous amounts of pepper (the entire surface should be covered in black pepper)
Cook in crock pot for 10-12 hours on low heat
Meat should fall from the bone, or shred with forks
Eat as is or top with your favorite BBQ sauce
Coleslaw
12 ounces cabbage, chopped
1 cup cilantro, chopped
1/2 cup plain yogurt
3-4 green onions, finely chopped
1 clove garlic, minced
1/2 jalapeno, seeded and finely chopped
3 tablespoons olive oil
3 tablespoons lime juice
2 tablespoons parsley, finely chopped
1/2 teaspoon salt
Mix and refrigerate for a few hours
Serve cold
